- Look for beets that are firm and unblemished. The greens should still be attached, but they should not look wilted or slimy.
- Trim the greens from a few inches of the tops of fresh beets, leaving 2 inches of stems.
- Avoid beets with soft spots or nicks in their skin, which can indicate damage to the interior.
- Beets will last several weeks when stored in a cool, dry place. If you plan on keeping them for more than a few days, store them in a plastic bag in your refrigerator’s crisper drawer—this will prevent them from drying out and becoming limp.
- Beets do not freeze well when fresh; however, cooked beets can be frozen for later use. They can be frozen for eight to 10 months if they are tightly wrapped and vacuum-sealed.
- Roast them whole in foil packets at 400 degrees Fahrenheit for 40 minutes or until tender when pierced with a fork. You can also steam them for about 20 minutes before roasting for more tender beets.
